Thick Garlic

We tracked down the last of the garlic scapes we could find and gave them a short ferment. Paired with Bell, Jalapeno, and Datil, this sauce brings a perfect balance of fresh green peppers and complex waves of garlic. The texture of this sauce is almost salsa like, thanks to those beautiful garlic scapes.
